Michelin-starred Hototogisu Ramen was founded in 2006 by Chef Atsushi Yamamoto in Tokyo, Japan. His resolute and meticulous persistence to his craft has earned him numerous world-class accolades. Achieving the honour of being awarded the prestigious One Michelin Star for three years in a row in the Tokyo Michelin Guide from 2019 to 2021 after four consecutive years of attaining the Tokyo Michelin Bib Gourmand title from 2015 to 2018, it has been a journey for a ramen shop which started out as a humble eight-seater tucked away in a quiet alleyway of Shibuya. It is also one out of the only two ramen shops which managed to receive One Michelin Star in 2021. “My motto is “always make a one-of-a-kind taste”. I am thankful to the producers of all ingredients so I do not wish to waste any food and always strive to present something that will make my diners happy and delighted to say “it is delicious!”. I am not particularly talented nor gifted so I always have to put in more effort than other people.
